This place opened in 1970, 100 years after the opening of LA BOLA, in a beautiful place located in a palace of S. XVIII, decor inspired by Federico Garcia Lorca and the bullfighting world with their flamenco shawls, make this the perfect place to get lost in the magic of flamenco and Spanish cuisine, our specialty is PAELLA.
The most important artists have gone and go through our stage and our show with two passes of 90 minutes each day will delight all who see it.

Although paella is based on rice, there are very many paellas with very many different ingredients and of course, personal touchs. Here, an easy recipe:
Firstly, heat olive oil in a frying pan and soften the leek for 5 mins without browning. Then, add Spanish chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils. In this moment, pour in the stock. Bring to the boil, then simmer for 12 or 15 mins, stirring from time to time.
Afterwards, tip in the peas, cook and stir in the seafood to heat through for a final 2 minutes, until rice was cooked.
Finally, serve with lemon wedges.
